The Japanese Deba knife is intended primarily for boning meat and fish. It is very strong to achieve a precise cut. It is traditionally used for filleting fish, cutting poultry or cutting vegetables.
Blade with asymetrical edge. Stainless steel with Molybdenum and Vanadium, from Takefu steelworks, ultra-premium steel producer in Japan. Handles are made from Maple wood, treated by Keboy method (way of wood preservation from Norway, mostly used in polar expeditions).
Do not use in dishwasher.
Length 180/320 mm.
Use for sharpening Catler CS2010.
