The Japanese knife Sashimi is designed for the preparation of sushi and sashimi. It is designed to cut the meat with one quick move from the heel to the tip without applying pressure to the raw material, and the cut is always sharp and smooth. It is suitable for working with fish and slicing cheese or ham.
Blade with asymetrical edge. Stainless steel with Molybdenum and Vanadium, from Takefu steelworks, ultra-premium steel producer in Japan. Handles are made from Maple wood, treated by Keboy method (way of wood preservation from Norway, mostly used in polar expeditions).
Do not use in dishwasher.
Length 210/345 mm.
